Early last week, I was thinking about Cinco de Mayo and what to make for dinner that night. I made some suggestions to my family and Jason’s comment was “you are going to make me choose?” Since we all loved all of the choices so much, we decided to have a week-long Cinco de Mayo CELEBRATION!!!
We started on Monday with homemade Café Rio Grilled Chicken Salad. YUM-O!
Tuesday was my birthday, so we had a non-Mexican meal.
Wednesday we had Lime Chicken Fajitas!! My mouth is watering just THINKING about it!!
Ever since our trip to the Church History Museum and the “dancing skirts” I have wanted to make my girls some for home. My mom convinced me to tear into this project in time for Cinco de Mayo. I took a bunch of material (ok fine, it’s an old yellow sheet) and turned it into 3 twirly skirts! I put brightly colored decorative stitching around the bottom, but I just realized I did not take any close up pictures of it. The girls loved their skirts! While I was making dinner, I put on some music for them to dance to. They loved it!!
I made Jared a little vest and bandelo!! (I don’t know if that is what it is really called. I asked my Mexican sister, but she refused to be knowledgeable) He hated it at first, but by bedtime loved it. (That’s why the only “posed” pictures are in his pj’s)
He loved running around and dancing to the music too!
Oh, and flinging himself on the couches…

On to the feast!! And it was a very yummy feast! We had Homemade Chicken Taquitos with Lime Ranch Dressing, Fresh Salsa and chips, Limeade, and some Honeydew melon. mmmmmmmmmmmmmm!!!!!
The girls all shouted “Happy Cinco de Mayo” during the pictures!! hehe!
I also want to point out Jared’s traumatized face in the pictures. He was REALLY MAD that I was making him take a picture BEFORE he got his food!!
mmmmmmmmm! I wish it was Cinco de Mayo again so I could be eating this yummy food right now!!
Happy Cinco de Mayo!! (I have absolutely NO IDEA what this holiday is actually about. Savannah learned about it in school, and I think she told me, but I was cooking, and imagining myself eating the deliciousness, and didn’t really pay enough attention to remember!! )
